Main Purpose of Job
Ensure that all health and safety regulations are followed in relevant areas.
Ensure that all food safety rules are followed.
Debone and trim mutton products in accordance to the finished product specifications whilst making sure maximum meat yield is achieved.
Shift Times:
Monday 9.30 -6
Tuesday 9.30 -6
Wednesday 9.30 - 6
Thursday 9.30 -6
Main Duties
Carcass intake from refrigeration to the processing area
Ensure all animals are processed in accordance with the product specifications.
Breaking carcasses down from whole to primal’s using a circular knife, bandsaw and knife.
Work in accordance with Work Instructions
Sharpening and adjusting cutting equipment.
End of shift full area clean down of equipment
Butchering primal’s to retail spec and packing.
Only apply if experience in butchery
Candidate Requirements
- Proven experience in food preparation and butchery
- Strong knowledge of food safety standards and practices
Personal Qualities
A can-do attitude.
Flexible / team worker
A sound understanding of Health and Safety standards.
Observant and able to work on own initiative.
Good presentable appearance.
Self-motivated
Reliable
