Full Time or part time opportunity for an experienced Butcher, Cutter, Boner to work at a busy cutting unit in Cardigan. The candidate would require extensive experience in boning beef and pork, with good knowledge of the various cuts available. The candidate would need to understand the need for stock rotation and general housekeeping of a boning unit.
Knowledge of making sausage advantageous but not necessary, as training will be given to use our machines.
Duties include
-Full preparation from carcass to primals, packed and labelled (training given for labelling methods and requirements).
-Sausage making 2 times a week (training for new automated machines given)
-Slicing bacon on our automatic slicer (Training given)
-General cleaning of unit and work area on days of work.
-Aiding in receiving delivery of stock. Carrying stock into appropriate fridges, checking and signing off condition of delivery.
