The Kitchen Porter is responsible for maintaining the cleanliness and hygiene of the galley (kitchen) and its equipment. This role ensures the smooth operation of food preparation areas by supporting chefs and kitchen staff, primarily through cleaning duties, dishwashing, and basic prep work.
Key Responsibilities:
- Wash dishes, utensils, pots, and pans manually or using industrial dishwashers.
- Clean and sanitize food preparation surfaces, kitchen floors, walls, and equipment.
- Remove waste and recycle materials from the galley, following hygiene protocols.
- Assist chefs with basic food prep tasks as directed (e.g., peeling vegetables, unpacking deliveries).
- Maintain stock of cleaning supplies and alert supervisors when items run low.
- Follow all hygiene, health, and safety regulations, especially maritime or shipboard standards.
- Ensure proper waste segregation (wet, dry, food waste) per environmental and shipboard policies.
- Support general kitchen organization and ensure items are returned to their correct places.
Requirements:
- Previous experience in a hospitality or marine kitchen environment preferred but not always required.
- Strong understanding of hygiene and food safety regulations (HACCP knowledge a plus).
- Ability to work in a fast-paced, hot, and physically demanding environment.
- Team player with a strong work ethic and attention to detail.
- Willingness to follow instructions and take on a wide range of cleaning tasks.
