As our business continues to grow, we are looking for a passionate and experienced Butcher to lead our butchery operations and uphold our commitment to excellence.
Role Overview
As Butcher, you will be responsible for overseeing daily butchery operations, supervising a small team, and ensuring the highest standards of meat preparation, hygiene, and customer service. You will work hands-on alongside your team—cutting, trimming, and preparing meats—as well as managing stock, compliance, and workflow efficiency.
Key Responsibilities
- Break down carcasses (beef, lamb, poultry, fish) into high-quality retail cuts.
- Prepare, trim, and portion meats accurately with a focus on presentation and consistency.
- Supervise and train butchery staff, fostering skill development and teamwork.
- Use knives, saws, grinders, and other specialist tools for processing.
- Oversee production of sausages and value-added products.
- Ensure compliance with all food safety, hygiene, and HACCP regulations.
- Monitor and manage stock levels, ordering supplies and reducing waste.
- Weigh, package, and label meat products for retail and wholesale.
- Maintain a clean, organised, and safe working environment.
- Deliver excellent customer service, including advising on cuts and cooking methods.
- Contribute to product development and display ideas to drive sales.
Requirements
- Proven experience as a butcher, ideally in a leadership or supervisory role.
- Expert knowledge of meat cuts, processing techniques, and portioning.
- Strong understanding of food safety, hygiene, and HACCP best practices.
- Excellent knife skills and familiarity with butchery equipment.
- Ability to work in cold environments and lift heavy items (up to 15 KG).
- Strong communication skills and a customer-focused approach.
- Reliable, organised, and able to work independently and as part of a team.
Preferred:
- Experience working in both retail and wholesale butchery environments.
Working Conditions
- Standing for extended periods, regular use of sharp tools.
- Work in refrigerated environments.
- Flexibility to work weekends and public holidays when required.
Job Type: Full-time
Pay: £18.65 per hour
Expected hours: 40 per week
