We bake using traditional techniques—naturally leavened doughs, high-hydration baguettes, enriched brioche—and operate a high-volume deck oven that demands precision, skill, and efficiency.

The Role
As an Assistant Baker, you will be integral to our production team. You’ll work efficiently and cleanly in a fast-paced environment to help produce a wide range of baked goods to the highest standards.
Key Responsibilities:
- Mix and handle various doughs: naturally leavened (sourdough), yeasted, enriched, and high-hydration formulas
- Accurately calculate and use baker’s percentages for scaling recipes
- Operate and monitor large bread deck ovens
- Maintain a spotless working environment: clean as you go, sanitize tools, and tidy surfaces
- Work rapidly and effectively to meet production targets for breads and pastries
- Assist with inventory, ingredient prep, and batch organization as needed
- Collaborate with team members and demonstrate initiative—identifying improvements, suggesting efficiencies, and supporting a team-oriented culture
Requirements:
- Minimum of 1 year of hands-on experience working in a commercial bakery
- Proven ability to work with naturally leavened, yeasted, enriched, and high-hydration doughs
- Comfortable reading and applying baker’s percentages
- Competent in working with deck ovens at scale
- Self-motivated, driven, reliable, and able to work proactively under your own initiative
- Strong team player with excellent communication skills
- Early-morning availability (from 05:00) and flexible availability for weekends
